白神cheese吐司-番外篇-你吃進了多少防腐劑?

在網路上看到有人用麵包機做cheese吐司,據說做出來的吐司又香又軟、很好吃。

根據我的麵包機食譜,cheese吐司要使用cream cheese。找了幾家超市,所賣的卡夫費城Kraft Philadelphia cream cheese,居然都有添加防腐劑-已二烯酸鉀。
(不只cream cheese,包括一般的cheese片,大多數也都有添加防腐劑...)

這件事情對我來說簡直是晴天霹靂!! 想當年,那麼愛吃cheese蛋糕,立志要吃遍台北市所有cheese蛋糕的我,不知道吃下了多少防腐劑??

很不甘心的我,為此跑到了卡夫食品的網站去查個究竟。這才發現這個品牌的cream cheese及cream cheese抹醬,包括不同口味、不同size、不同包裝,共有60種,其中若以紙盒包裝者似乎沒有添加防腐劑,而以塑膠盒包裝者則有添加防腐劑。

儘管如此,我仍覺得納悶,因此寫信到Kraft的客服去詢問,得到的回覆如下:

Preservatives serve to protect foods from spoilage and to protect the eating quality of food products.


They are used as antimicrobials, antioxidants, or they can be used to protect flavor and color. Antimicrobials prevent the growth of molds, yeasts and bacteria.


Antioxidants keep foods from becoming rancid, prevent browning or developing black spots, and protect flavor. Antioxidants also minimize the damage to some essential amino acids -- the building blocks of proteins -- and they protect the loss of some vitamins.


When preservatives are added directly to our products, they are declared in the ingredient statement on the label. Some preservatives are added by our vendors to the ingredients we purchase.


The preservatives function to keep the ingredients fresh during storage until the ingredients are used in our products; they typically do not have a function in the finished food product. In those cases, the preservatives are considered incidental additives and are not declared on labels marketed in the U.S., per FDA regulation.


We encourage our consumers to look at the information on our labels each time before purchasing our products, as formulations will change from time to time.

根據以上的回覆,添加物中沒標示有防腐劑的,不見得就真的沒有防腐劑,有可能只是最後加工的公司沒有添加,但原材料供應商可能已有添加了!!

那麼,我們每天吃進了多少防腐劑呢?
